If you have not made the plunge into some of the new small appliances, you can learn more inour article that gives an overview of slow cookers, multicookers, and the Instant Pot.The Mediterranean Instant Potcookbook is a perfect companion for the small appliance that saves hours of cook time while delivering healthy meals.Take, for example, theInstant Pot Sicilian Fish Stew.The combination of sauteed onions, garlic, tomatoes, clam juice, wine, raisins, and capers with swordfish makes a quick and easy weeknight dinner.Instant Pot Sicilian Fish StewMakes 6 servings2 tablespoons extra-virgin olive oil2 onions, chopped fine1 teaspoon table salt teaspoon pepper1 teaspoon minced fresh thyme or teaspoon driedPinch red pepper flakes4 garlic cloves, minced, divided1 (28-ounce) can whole peeled tomatoes, drained with juice reserved, chopped coarse1 (8-ounce) bottle clam juice cup dry white wine cup golden raisins2 tablespoons capers, rinsed1 pounds skinless swordfish steak, 1 to 1 inches thick, cut into 1-inch pieces cup pine nuts, toasted cup minced fresh mint1 teaspoon grated orange zestUsing highest saut function, heat oil in Instant Pot until shimmering.Add onions, salt, and pepper and cook until onions are softened, about 5 minutes.Stir in thyme, pepper flakes, and three-quarters of garlic and cook until fragrant, about 30 seconds.

Stir in tomatoes and reserved juice, clam juice, wine, raisins, and capers.Nestle swordfish into pot and spoon some cooking liquid over top.Lock lid in place and close pressure release valve.Select high pressure cook function and cook for 1 minute.

Turn off Instant Pot and quick-release pressure.Carefully remove lid, allowing steam to escape away from you.Combine pine nuts, mint, orange zest, and remaining garlic in bowl.Season stew with salt and pepper to taste.
